Thai Basil Fried Rice

With this fried rice, I am done with my last bit of Thai Basil.
Really love the subtle licorice taste of this condiment in my dishes.
Wonder if it’s possible to grow some myself?

Thai Basil Fried Rice

What U need:

  • 3 cups Rice
  • 6 cloves Garlic – crushed
  • 4 Thai chili – crushed (optional)
  • 500g Chicken meat - cut into bite sizes
  • 3 tbsp Oyster sauce
  • 2 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 1 medium Red bell pepper -julienne
  • 2 cups fresh Thai basil leaves
  • 1 cucumber - cut into bite size
  • ½ cup Coriander (garnish)

Method:

  1. Heat the oil in a deep pan over high heat.
  2. Add crushed garlic and crushed Thai chili and give them a quick stir till fragrant, ensure that they don’t burn.
  3. Add chicken meat and cook slightly.
  4. Add oyster sauce, fish sauce and brown sugar.
  5. Stir until the chicken is cooked through.
  6. Toss in the rice.
  7. Stir quickly until sauces are blended with rice.
  8. Add the red bell peppers and keep stirring for few seconds and add Thai basil leaves next for another quick stir.
  9. Turn the heat off.
  10. Garnish with sliced cucumbers and coriander sprigs.
  11. Serve immediately.
