An afternoon with Mocha Cupcakes...

This afternoon little miss muffet came a visiting with her mama for tea.
This little gal has grown so fast….she is already taking wobbly steps on her own.

As this visit was a last minute thingy, I made some mocha cupcakes to feed my guests.....it's the fastest thing one can whip up at such short notice.

The weather is really scorching hot as usual…this is my constant complain if U noticed, so please bear with me….!!!!
I know my electricity bill is gonna shoot rocket high again this month…cuz I need the air-conditioning switched on most of the time.

To douse the heat, I made a huge jug of iced tea (yeah! again!!!)...which was a wise choice cuz muffet's mama too was very bothered with the temperature.

Armed with iced tea & cupcakes, muffet's mama & moi settled down and had a lovley tete-a-tete while elf entertained the little one.

Good times always end so quickly, some two hours later she's got to make a hasty departure to go fetch little jules from school.

It was great catching up with her as she is always so busy with her kiddies.
Hardly get to meet her anymore. *sobz*
Hehhhh! The price of motherhood…especially for one with 3 kids…*wink*

Here’s the recipe if U wanna give it a try... !

Mocha Cuppies

Mocha Cupcakes

What U need:

  • 2 tsp Instant coffee granules
  • 2 tbsp Cocoa powder
  • 2 tbsp Hot water
  • 175g Butter
  • 175g Sugar
  • 2 Eggs
  • 2 tbsp Golden syrup
  • 200g Self-raising flour
  • 4 tbsp Milk

Method:

  1. Preheat the oven to 180C.
  2. Measure the coffee and cocoa into a cup, add the hot water and mix into a smooth paste.
  3. Put the butter, sugar, eggs, syrup, flour, milk and cocoa paste in a large mixing bowl and beat until smooth.
  4. Scoop the mixture into muffin cups.
  5. Bake for 25minutes or until the top springs back when you press it lightly.
  6. Cool the cupcakes & U may decorate them with icing or ganache.

For this batch of cupcakes, I used...

Cream Cheese Frosting

What U need:

  • 225g Cream cheese - softened
  • 55g Butter - softened
  • 125g Icing sugar - shifted
  • 1 tsp Vanilla extract

Method:

  1. Mix cream cheese & butter till creamy.
  2. Add vanilla extract & mix well.
  3. Add icing sugar gradually & mix well.
  4. Store frosting in chiller till ready to use.
  5. Thaw slightly before using.
