Spicy Soba Salad

Lately, I am not very keen in cooking hot piping meals; something tells me it’s the weather.

Rain can be heard pitty-patty in the wee hours of the morning, but scorching hot sun around mid-day. By late afternoon, lightning & thunder sent it's greeting followed by heavy downpour.
Such unpredictable weather make me a lethargic being... no energy for too strenuous activity, let alone cooking. I just wanna curl up in bed.

Here at muck-a-muck, U can see that I tend to stick to easy and simple meals.

Today, is another quick and easy cold noodle, eaten with a wicked sauce that will seduce your senses & make you burp in contentment after eating

This dish is considered healthy, cuz it’s made up of buckwheat noodles, boiled chicken and lots of greens.
The sauce consists of wonderful ingredients that are both delicious and appetizing and the best part...IT is SPICY !
One can whipped up this meal in a matter of 30 mins without flexing too many muscles, breaking any sweat or getting your hair outta place.

This dish is best served chilled before eating. So prepare it 1-2 hours before meal time.

Soba Salad

Spicy Soba Salad
(Serves 2-4)

What U need:


  • 300g Buckwheat noodles
  • 200g Chicken breast – whole
  • 2 cups Chicken broth – instant broth used
  • 1 small Cucumber – cut thinly into strips
  • 1 small Carrot – cut thinly into strips
  • 2 Eggs – hardboiled
  • 6 pcs Lettuce – cut into even lengths
  • 2 pcs Spring onions – cut into small bits, for garnishing
  • 2 tbsp Sesame seeds – for garnishing

Method:

  1. Boil the chicken breasts in the chicken broth till meat is cooked.
  2. Cool the chicken broth for use later in making the sauce.
  3. Shred the chicken breast into little strips.
  4. Cook the noodles according to the package, drain & chill for use later.
  5. Cut all the vegetables into even lengths and chill.
  6. Boil & slice the eggs.
  7. Before serving, arrange the noodles, vegetables, eggs, nicely on the plate, garnished with spring onions & sesame seeds.
  8. Serve with the spicy sauce, noodles & ingredients to be eaten well tossed with the sauce.
Soba Salad

Spicy sauce ingredients:

  • ½ cup Chicken broth – achieved from the broth after boiling the meat
  • 2 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 2 tbsp Chilli paste
  • 2 tbsp Sugar
  • 2 tbsp Vinegar
  • 2 tbsp Mustard
  • 4 tbsp Garlic paste
  • 1 tbsp Sesame seeds

How to prepare the sauce:

  1. Put the chicken broth together with all the sauce ingredients into a mixing bowl.
  2. Mix well, chill & is ready to serve.
