Bruschetta

Bruschetta is very easy to prepare.
Great for a lazy Sunday brunch or snack.
Read somewhere that the word “bruschetta” means “to roast over coals” in Italian.

What I made today is a modified recipe topped with Smoked Salmon.
It gives the bruschetta a different light.
The combination of tomatoes & smoked salmon are simply out of this world.
A word of caution..... if you are not a fan of garlic, you may reduce it accordingly.

Bruschetta with Smoked Salmon

What U need:

  • 1 Baguette
  • Store bought garlic butter

Method:

  1. Slice baguette & toast till light brown.
  2. Spread garlic butter & set aside.

Topping:

  • 6 Tomatoes
  • 5 Cloves minced garlic
  • 2 tbsp Olive oil
  • 5 tbsp Balsamic vinegar
  • Chopped parsley
  • ½ tsp Salt
  • Pepper to taste
  • Smoked salmon cut into strips

Method:

  1. Dice tomatoes & add all other ingredients & mix well.
  2. Spoon the tomatoes onto the baguette.
  3. Top with smoked salmon...serve.
